INGREDIENTS
- 1 tablespoon olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 1 (15 ounce) can diced tomatoes, drained
- 2 teaspoons dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1/4 teaspoon crushed red pepper flakes
- Salt and pepper to taste
- 1 pound peeled and deveined large shrimp
(order ahead and have it deveined for you)
- 1 tablespoon minced parsley
DIRECTIONS
Heat the olive oil in a large skillet over medium-high heat.
Add the onion and garlic and saute for 4 minutes.
Add the tomatoes, oregano, basil, thyme, crushed red pepper
flakes, salt, and pepper and bring to a boil.
Lower the heat and simmer for 5 minutes.
Add the shrimp, cover, and cook over medium heat
for 2-3 minutes until the shrimp is cooked through.
Top with minced parsley.
